Get ready for a blend of textures and flavors.

First, make the Crispy Puris.

In a bowl, mix together 1 cup of sooji and a pinch of salt.

Add water slowly until you have a stiff dough.

Cover the dough and let it sit for 15 to 20 minutes.

Cut the dough into small pieces and roll each piece into a flat, thin disc.

Fry the puris until they puff up and turn golden brown in hot oil.

Step 2: Make the spiced water (Pani) that tastes good.

In a blender, mix together 1 cup of fresh mint leaves, 1/2 cup of fresh coriander leaves, 2-3 green chilies (change to taste), a 1-inch piece of ginger, and a pinch of black salt.

Blend until the mixture is smooth, then pour it through a strainer into a big bowl.

Add two tablespoons of tamarind pulp, one tablespoon of chaat masala, one teaspoon of roasted cumin powder, one teaspoon of black salt, and a half teaspoon of salt to the bowl.

Mix well, then add 4 cups of cold water and stir until everything is well-blended.

Step 3: Make the tangy tamarind chutney

Mix 12 cup of tamarind juice, 12 cup of jaggery (or sugar), 1 teaspoon of roasted cumin powder, 12 teaspoon of red chili powder, and 12 teaspoon of black salt in a small saucepan.

Cook the mixture over low heat until it gets thick, like sauce.

Take it off the heat and let it cool down.

Step 4: Make the filling with savory potatoes

Boil and then mash 1 cup of potatoes.

Depending on your taste, add salt, roasted cumin powder, red chili powder, and chopped coriander leaves.

Mix well, then put to the side.

Step 5: Put together the right mix

Each puri should have a small hole in the top.

Spoon a bit of the potato filling into each puri.

Give each puri a few drops of the sweet tamarind sauce.

Step 6: Serve, and have fun!

Put the puris that have been filled on a plate.

Pour the pani into small cups or a pitcher.

Serve the puris and pani together, and let each person fill their puris as they like with the spicy water.

Step 7: Make it your own and please

You can change the amount of spices and how sweet the chutney is to suit your taste. You can also try ingredients like boiled chickpeas, sprouts, or boondi for a different texture and taste.
